Watermelon and Feta Salad with Champagne Mint Vinaigrette

Ingredients
  

Watermelon and Feta Salad
  • 2 cups watermelon cubed
  • 1 cup feta cheese cubed or crumbled
  • 3 cups salad greens
  • Fresh mint leaves to garnish
Champagne Mint Vinaigrette
  • 1 garlic clove
  • 1 tbsp Dijon Mustard
  • 2 tbsp sparkling wine
  • 2 tbsp cider vinegar
  • 2 tbsp sparkling wine
  • 1 tbsp agave
  • 1 tbsp fresh mint leaves
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup extra virgin olive oil

Method
 

Watermelon and Feta Salad
  1. Toss the watermelon with 2 tablespoons of the vinaigrette below. Toss the salad greens with dressing until evenly dressed. Put salad greens in a bowl or platter and top with watermelon and then feta. Garnish with mint leaves.
Champagne Mint Vinaigrette
  1. Pulse together all ingredients up to the olive oil in the food processor. Add the olive oil in a slow stream until incorporated. Adjust seasoning to taste.
