Vegetable Tortilla Pizza

Ingredients
  

  • 1 flour tortilla
  • 1/2 cup pizza or spaghetti sauce
  • 1/2 cup grated fresh farm cheese or mozzarella
  • local farm vegetables as desired chop small
  • 1 tbsp butter melted
  • 1 clove garlic

Method
 

  1. Heat oven to 350 degrees.
  2. Chop vegetables. If you prefer them to be softer when eating, dice finely. If you prefer them more crispy, dice to 1/2". 
  3. Finely chop the garlic and mix it into the butter.
  4. Place one flour tortilla on a pizza pan. Spread sauce to within half inch of the edge. Use a knife to spread the garlic butter mixture on the edge with no sauce. Cover the sauce with cheese. Add vegetables to the top.
  5. Bake at 350 degrees until cheese is melted on top and sides are slightly browned. Approx. 10 minutes.
