Watermelon and Feta Salad with Champagne Mint Vinaigrette

Ingredients
Watermelon and Feta Salad
- 2 cups watermelon cubed
- 1 cup feta cheese cubed or crumbled
- 3 cups salad greens
- Fresh mint leaves to garnish
Champagne Mint Vinaigrette
- 1 garlic clove
- 1 tbsp Dijon Mustard
- 2 tbsp sparkling wine
- 2 tbsp cider vinegar
- 2 tbsp sparkling wine
- 1 tbsp agave
- 1 tbsp fresh mint leaves
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/2 cup extra virgin olive oil
Instructions
Watermelon and Feta Salad
- Toss the watermelon with 2 tablespoons of the vinaigrette below. Toss the salad greens with dressing until evenly dressed. Put salad greens in a bowl or platter and top with watermelon and then feta. Garnish with mint leaves.
Champagne Mint Vinaigrette
- Pulse together all ingredients up to the olive oil in the food processor. Add the olive oil in a slow stream until incorporated. Adjust seasoning to taste.
