New Orleans Style Tilapia
Blackened Tilapia over a bed of fresh sautéed vegetables.

Ingredients
- 2 6 oz Tilapia filets
- 1/4 cup Cajun spice
- Extra Virgin Olive Oil as needed
- 1 zucchini
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 10 garlic cloves peeled
- 1 Vidalia onion
- 2 heirloom tomatoes
- 1/4 cup Ea. Rosemary, thyme, and cilantro
- 1 cup ketchup
- 1 cup olive oil
- 1/3 cup Dijon mustard
- 1/2 cup brown sugar
- 1/3 cup balsamic vinegar
- pinch kosher salt
- pinch black pepper
- 1/4 cup capers
- 1/3 cup mayonaise
- 2 tbsp Dijon mustard
- pinch paprika
- 1 jalapeño pepper
- Old Bay to taste
Instructions
- Rub tilapia generously in Cajun spices. Marinate zucchini, onion, tomato, ketchup, olive oil, herbs and garlic.
- Mix in bowl: olive oil Dijon mustard, brown sugar, balsamic vinegar, and salt and pepper.
- Pour over vegetables and herbs.
- In bowl: mix capers, Dijon mustard, paprika, jalapeño, Old Bay, and pinch of Cajun spice.
- In hot cast iron pan, sear tilapia for two minutes on both sides.
- Grill vegetables.
- Mix mustard, vinegar, onion, tomatoes and peppers.
- Julianne grilled vegetables and toss in balsamic vinegar; place vegetables on plate top with tilapia and creole tartar.
