Mary Anna’s Chocolate Zucchini Cake

Ingredients
- 1/2 cup butter, softened
- 2 1/2 cups flour
- 1/2 cup canola oil
- 1/2 tsp baking powder
- 1 1/2 cups sugar
- 1 tsp baking soda
- 2 eggs
- 1/2 tsp salt
- 1/4 cup cocoa
- 2 cups washed, unpeeled finely grated zucchini
- 1/2 cup milk mixed with 1/2 tbsp
- lemon juice
- 1 tsp vanilla
- chocolate chips and chopped nuts
Instructions
- Preheat oven to 325 degrees. Cream butter, oil and sugar. Beat in eggs, cocoa, lemon milk, and vanilla. Sift together flour, baking powder, soda & salt. Stir into cocoa mixture, blend well. Fold in zucchini. Pour into greased and floured 9″x13″ pan or cupcake tins. Sprinkle top of cake with chocolate chips and nuts. Bake for 45 min. for cake or 30 min. for cupcakes.
