Heirloom Tomato Chutney

Heirloom Tomato Chutney

Ingredients

  • 1 qt heirloom cherry tomatoes (or cubed heirloom tomatoes)
  • 3 tbsp garlic minced
  • 3 tbsp olive oil
  • 1/2 cup honey or agave nectar
  • 1 cup semi-dry white wine
  • 2 cups balsamic vinegar
  • 1 tsp crushed red pepper
  • Salt and pepper to taste

Instructions

  • Heat a saucepan over medium heat. Add in olive oil and tomatoes. Cook until tomatoes start to blister/ wrinkle.
  • Add in all other ingredients, reduce heat and simmer for about 10 mins. Using the back the spoon, mash the tomatoes lightly.
  • Continue cooking on low till thickened like a loose Jam about 30 min.
