Easy Homemade Salsa

Ingredients
- 3 medium tomatoes
- 1 small onion or 1/2 cup scallions
- 1 sweet bell pepper chopped
- 1 tbsp dried cilantro or tbsp fresh
- 1 hot pepper chopped
- 1/2 tsp salt
- 2 cloves garlic minced
- tomato paste optional
Instructions
- Prepare fresh tomatoes by dipping them briefly in boiling water for 30 seconds or until tomato skins split. You may substitute fresh tomatoes with 3 cups canned tomatoes (omit salt if canned tomatoes are of high salt content). Place all ingredients in a saucepan and simmer for 10-15 minutes. If thick salsa is preferred add tomato paste by the tablespoon until you have the desired consistency. The amount of heat can be adjusted by the type and amount of hot peppers used. Cool and refrigerate. This salsa can be made several days ahead and may be used in any recipe calling for prepared salsa or serve with your favorite tortilla chips.
