Heirloom Tomato Chutney

Ingredients
- 1 qt heirloom cherry tomatoes (or cubed heirloom tomatoes)
- 3 tbsp garlic minced
- 3 tbsp olive oil
- 1/2 cup honey or agave nectar
- 1 cup semi-dry white wine
- 2 cups balsamic vinegar
- 1 tsp crushed red pepper
- Salt and pepper to taste
Instructions
- Heat a saucepan over medium heat. Add in olive oil and tomatoes. Cook until tomatoes start to blister/ wrinkle.
- Add in all other ingredients, reduce heat and simmer for about 10 mins. Using the back the spoon, mash the tomatoes lightly.
- Continue cooking on low till thickened like a loose Jam about 30 min.
