New Orleans Style Tilapia

Blackened Tilapia over a bed of fresh sautéed vegetables.

Ingredients

  • 2 6 oz Tilapia filets
  • 1/4 cup Cajun spice
  • Extra Virgin Olive Oil as needed
  • 1 zucchini
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 10 garlic cloves peeled
  • 1 Vidalia onion
  • 2 heirloom tomatoes
  • 1/4 cup Ea. Rosemary, thyme, and cilantro
  • 1 cup ketchup
  • 1 cup olive oil
  • 1/3 cup Dijon mustard
  • 1/2 cup brown sugar
  • 1/3 cup balsamic vinegar
  • pinch kosher salt
  • pinch black pepper
  • 1/4 cup capers
  • 1/3 cup mayonaise
  • 2 tbsp Dijon mustard
  • pinch paprika
  • 1 jalapeño pepper
  • Old Bay to taste

Instructions

  • Rub tilapia generously in Cajun spices. Marinate zucchini, onion, tomato, ketchup, olive oil, herbs and garlic.
  • Mix in bowl: olive oil Dijon mustard, brown sugar, balsamic vinegar, and salt and pepper.
  • Pour over vegetables and herbs.
  • In bowl: mix capers, Dijon mustard, paprika, jalapeño, Old Bay, and pinch of Cajun spice.
  • In hot cast iron pan, sear tilapia for two minutes on both sides.
  • Grill vegetables.
  • Mix mustard, vinegar, onion, tomatoes and peppers.
  • Julianne grilled vegetables and toss in balsamic vinegar; place vegetables on plate top with tilapia and creole tartar.
