Chef Scott's Favorite Marinade: Ginger-Soy-Orange Marinade

  • 1/2 cup soy sauce
  • 1/2 cup orange juice*
  • 1/4 cup olive oil canola/olive blend also works well
  • 2 tbsp orange zest grated orange peel
  • 2 cloves fresh garlic chopped
  • 1 tbsp fresh ginger minced
  • *1/4 cup dry cooking sherry can be substituted for ~cup of orange juice


  • Stir together all ingredients and chill for 1 hour. Place meat in shallow dish and pour chilled marinade over meat. Cover and chill at least 2 hours, with up to 8 hours being even better. Remove meat and grill on a hot grill to desired doneness.
