Easy Homemade Salsa Posted in Peppers, Tomatoes Easy Homemade Salsa Recipe courtesy of St. Helier Farm Ingredients3 medium tomatoes1 small onion or 1/2 cup scallions1 sweet bell pepper chopped1 tbsp dried cilantro or tbsp fresh1 hot pepper chopped1/2 tsp salt2 cloves garlic mincedtomato paste optional InstructionsPrepare fresh tomatoes by dipping them briefly in boiling water for 30 seconds or until tomato skins split. You may substitute fresh tomatoes with 3 cups canned tomatoes (omit salt if canned tomatoes are of high salt content). Place all ingredients in a saucepan and simmer for 10-15 minutes. If thick salsa is preferred add tomato paste by the tablespoon until you have the desired consistency. The amount of heat can be adjusted by the type and amount of hot peppers used. Cool and refrigerate. This salsa can be made several days ahead and may be used in any recipe calling for prepared salsa or serve with your favorite tortilla chips. Print Recipe
