Chicken and Rice

  • 1 organic pasture raised broiler chicken
  • 2 cup organic long grain brown rice
  • 1 small onion chopped
  • 1/4 cup bell pepper chopped
  • 4 cup hot water
  • unrefined sea salt to taste
  • 1 tsp ground sage


  • Preheat oven to 300 degrees. Place rice in the bottom of roaster. Sprinkle the onion and bell pepper on rice. Add hot water. Sprinkle with salt. Sprinkle salt onto outside of chicken. Place on top of rice. Sprinkle ground sage on top of chicken. Cover the chicken and rice. Bake for 3-4 hours or until rice and chicken are tender. The broth from the chicken bakes into the rice and gives it a marvelous flavor. Do you have leftover chicken and rice? Put the chicken and rice into a kettle and add water and salt. The broth is already in the rice. Heat and enjoy chicken and rice soup for lunch the next day.
