Chef Scott's Favorite Marinade: Ginger-Soy-Orange Marinade

  • ½ cup soy sauce
  • ½ cup orange juice*
  • ¼ cup olive oil (canola/olive blend also works well)
  • 2 tbsp orange zest (grated orange peel)
  • 2 cloves fresh garlic, chopped
  • 1 tbsp fresh ginger, minced
  • *1/4 cup dry cooking sherry can be substituted for ~cup of orange juice
  1. Stir together all ingredients and chill for 1 hour. Place meat in shallow dish and pour chilled marinade over meat. Cover and chill at least 2 hours, with up to 8 hours being even better. Remove meat and grill on a hot grill to desired doneness.
